Chicken Curry Sauce For Christmas 

​Christmas day, a day for merriment. Where families and friends visit each other, a time for sharing foods amongst each other. A time when you want to cook something very delicious for everyone especially the little ones.

  Now if you’re thinking of cooking something different, then make chicken curry sauce. Am going to give you my special recipe.

What you’ll need:

Chicken, carrots, spring onions, cabbage (optional) green beans, green peas, green pepper, green chilli pepper, yellow pepper, red chilli (shombo) bell pepper (tatashe) red pepper, 1 large onions, 1/2 tsp turmeric, 1tsp fresh grated ginger, 3 cloves of garlic, 1/4tsp ground cinnamon, 3 sweet potato, 25ml of belle Déesse virgin coconut oil, 5tbsp curry powder. 

 Method:

Wash the chicken and place in a pot, then add 1tbsp of curry, 1/4tsp of cinnamon, 1/2tsp turmeric, 1 tsp fresh grated ginger, 1 large diced onions, then add the chopped garlic and red pepper. Now stir and put the pot in the fridge for 15mins, this allows the chicken to soak up. Note: Don’t add water. While the chicken is in the fridge boil the sweet potato and smash when ready.

Now put the chicken on the fire on a  medium heat, when the chicken is soft add the smashed potato and a little water to boil for 2mins. Now add the chopped carrots, cabbage, green chilli pepper, yellow pepper, red chilli pepper, green beans, green peas, green pepper, bell pepper and stir together. Now add the 25ml of  belle déesse virgin coconut oil for an exotic taste, then add salt and any spices of your choice stir and cover the pot, allow to cook for 7mins. Lastly add the spring onions and put out the fire. Your chicken curry sauce is ready, you can add shrimps and liver if needed. 

Serve with rice, unripe plantains or yams. 

 You may be thinking the sauce is too peppery but not at all. Eat healthy and tasty and always.
